Jackson Hole "Been There" Advice

Hey gang,
Got a trip planned to the mighty Jackson Hole in January this year and have not been there before. My wife and I are spending a week there to celebrate our anniversary...yep, I know, the best of both worlds.

I like to know the lay of the land well in advance so we can really get the most out of the mountain. I'm a level 9 and my wife a level 7 so having trails blue and black type terrain that funnel to the same chair is always ideal but not always necessary.

I would like any thoughts on the best way to sk that mountain...where to start in the morning on a sunny day or powder day..
what's still holding snow by mid day...the beloved Tram is gone...best way to explore the top of the mountain. If all we have are groomed runs and no new snow, which trails are must ski?

 Best place to eat on the mountain for lunch, any restaurant suggestions.

Appreciate your suggestions..about the skiing part only!
